This book is the publication of a study based on the world's biggest public health problem for children, chronic malnutrition. The experimental part included the diet to which the populations and children of the peri- and suburban areas of Mozambique are subjected, which is essentially based on vegetables, peanuts, cassava and maize. From a nutritional point of view, it is well known that although this diet contains some protein, it does not meet the protein needs of the population in general, nor of children in particular. The study also emphasises the correlation between diet and muscle development, since it has been proven that this development, particularly in children, is extremely influenced by the availability and quality of food. The gastrocnemius muscle (MG) of wistar rats (Rattus norvegicus) was chosen because previous studies have shown that it has the same type of muscle fibres as the same muscle fibres in humans.
