Ingredients:
- 4 Chicken Thighs, Skinless & Boneless
- Sea Salt & Black Pepper to Taste
- 1 Teaspoon Cumin
- 1/2 Tablespoon Olive Oil
- 1 Teaspoon Smoked Paprika
- 1 Teaspoon Coriander
- 1 Clove Garlic, Minced
- 1/2 Yellow Onion, Chopped
- 1 Carrot, Chopped
- 14 Ounces Tomatoes, Chopped
- 4 Medjol Dates, Chopped
- 4 Tablespoons Chicken Stock
- 1/2 Lemon, Cut into Wedges
- 4 Tablespoon Green Olives, Pitted
- 2 Tablespoon Pine Nuts
- Mint, Chopped for Garnish
Directions:
- Mix your chicken thighs with your salt, pepper, oil, paprika, coriander and cumin.
- Press sauté on your instant pot, adding in your chicken. Brown for five minutes per side.
- Add in your onion, carrot, tomatoes, garlic, stock, olives, and dates. Stir well, and cook on high pressure for twenty minutes.
- Sprinkle with pine nuts and mint before serving.
